Our food program at The Copper Pig Bbq House is so locally focused we must change our food menus twice a year – to match the seasons and what is available. So for our chefs, the best part of summer in Prince George is the abundance of fun & exciting offerings to create from. As gardens and farms start to produce more herbs, vegetables and fruit – our culinary team has more options available to them.
It’s like going from 12 crayons to the 48 crayon box set.
So #ICYMI – TCP just launched our new summer lunch, dinner & share menus. We have a innovative farmer’s market board, improved salads, crafted original sandwiches and have another new innovative vegetarian dish of smoked zucchini noodles. (Yes we have many excellent vegetarian options)
Yet, probably our proudest creation is our home-made Country Fried Chicken. It took a lot of trial and error … and sampling … to create a true southern-style chicken – but I feel we have accomplished this.

Our chefs have created signature bbq entrees for our new lunch & dinner menus. And to add even more variety we are serving our country fried chicken 2 different ways. Your choice of a boneless chicken breast. Or my favourite – the drum leg & thigh. Or you can sample this real southern-style chicken on our new chicken salad or fried chicken sandwich. Plus a few new recipes for our new share menu. No matter your selection, you will not be disappointed.
